Appassilento, stands for a passo lento which means at a slow pace. This name has to do with the long fermentation process, up to three times longer than normal wine making. The result is a wine with depth and a unique concentration of flavors. During the process the temperature never exceeds 20 degrees, so the wine remains fruity and accessible.
The Appassilento Bianco comes from the protected Veneto region. The grapes grow in the province of Verona. The soil is rich in lime and clay and has a volcanic origin.
