Wonderfully refreshing Spumante from the fairly sturdy Grillo grape variety. Grillo is a typical Sicilian variety and is also used, for example, for the fortified wine Marsala.

This wine farm, dating from 1697, covers 50 hectares and has been owned by Stefano and Marina Girelli and their business partner Massimo Maggio since 2000. It is located near Vittoria, in the south of Sicily. The grapes from the Santa Tresa estate have been grown organically for years, but three years ago Santa Tresa decided to have this officially registered. As of the 2009 harvest, everything is officially certified as organic wine. The vineyards benefit from a cool southern sea breeze that compensates for the inland heat. The soil is fertile because of Etna.
